Dry roast 1.5 tsp mustard seeds, 1 tsp fenugreek seeds, and 1 tsp saunf until fragrant. After roasting, coarsely pound them together to form the achar masala. |

In a bowl, combine the sliced onions with salt, white vinegar (or fresh lime juice), fresh green chilies (finely chopped), thinly sliced ginger juliennes, some fresh coriander (chopped), red chili powder and the prepared achar masala. Mix all the ingredients well, using your hands for a homely touch. |

Heat 2-3 tsp mustard oil in a pan until it’s smokey. Add: 1/2 tsp hing and 1/2 tsp kalonji (nigella seeds) Let it splutter, then remove from heat. |
