For so many years, I have depended on Sukha Bhel during my local train journey from Churchgate to Andheri. It’s healthy, filling and light on the stomach. We just love making Sukha Bhel at home and having it for those 4 pm hunger pangs to get us through the day. And it’s chat, so absolutely by all means as delicious as it can get, plus adding fresh veggies like tomatoes, onion, cucumber, pomegranate with the peanut and chuna crunch makes it the most sought-after snack of all time.

To make its Sukha Chutney - In a blender jar, take 1 cup roasted chana. |

Into that add 1.5 tbs mildly roasted whole coriander seeds, 1 tsp mildly roasted cumin seeds, 1 tsp hing (asafoetida), 1 tsp aamachur powder, 1.5 tsp black salt, 1 small piece of ginger, fresh green chillies per your taste, a few curry leaves and 1 full cup fresh coriander. |

Add 2 tsp water or oil and coarsely grind it on pulse mode. |

Take it out in a bowl, and add salt if required. Delicious sukha chutney is ready. |

To serve Sukha Bhel - Dry roast white Murmura till it becomes crispy. Into that add some sev, spicy boondi and some crushed papdi. |

Then add masala peanuts and chana (in a pan take 2 tsp oil, into that add some haldi powder, red chili powder, dhania powder and salt. Add some raw peanuts and roasted chana, let it roast on slow flame till it becomes crunchy). |

Add finely chopped onion, tomatoes, boiled potatoes, raw mang, fresh coriander, cucumber and pomegranate. |

Add prepared sukha chutney and squeeze some lemon juice. |

Do not forget to add some more papdi on top. |
