Spice up your school lunch game! This new recipe of Spicy Tomato Chutney with Ragi Lauki Appe is a delicious and healthy addition to my Back to School Tiffin Recipes series. These fluffy, nutrient-packed appe are loaded with wholesome ingredients.
Ragi (Finger Millet) is a powerhouse of nutrition! It’s rich in calcium, great for strong bones, high in fiber for good digestion, and helps in managing blood sugar levels. Lauki (Bottle Gourd) is packed with vitamins, minerals, and water content, making it incredibly hydrating and beneficial for digestion and overall well-being.

To make chutney - In a chopper, take 2 cloves of garlic, a few fresh green chillies, 1 cup coriander and 2 medium size tomatoes |

- Add salt per taste and squeeze 1 fresh lime juice. Coarsely grind/chop everything together to make spicy tomato chutney. |

To make Ragi & Lauki Appe - In a bowl, take 1 cup Ragi atta, into that add 3 tbs Suji, 1/2 sour curd, salt per taste and a little less than 1/2 cup water. |

Mix everything well & keep aside for 10-15 minutes. (Let suji soak some moisture and batter shouldn’t be watery because we will later on add veggies while will ooze out some more water) |

Now into the batter add, 1/2 cup shredded lauki (if lauki is too watery, then squeeze out some water). |

Then add 1/4 cup finely chopped bell peppers, 1/4 cup shredded carrots, 1 medium size onion finely chopped, some finely hopped coriander leaves, a small piece of shredded ginger. |

To make appe more tasty, add tadka into the batter. (For which take 2 tsp oil in tadka pan. Once the oil gets heat up, add 1 tsp Jeera, 2 tsp Urad dal, 1/2 tsp Hing and a few curry leaves. Once tadka crackles and urad dal turns pink in color, pour Tadka into the batter.) and mix well. |

Just before making of appe, add a pinch of baking soda or 1/2 tsp fruit salt. And mix. |

Heat the appe pan, add a drop of oil in each cavity, sprinkle some white sesame seeds and pour the batter. |

Let the appe cook on a medium flame till you get nice golden colour on each side. |
