Ingredients

2 tsp oil For Rajma Filling:
1 medium-sized onion, finely chopped
1 cup boiled Rajma (kidney beans)
1.5 tsp Dhaniya powder (coriander powder)
1 tsp chili flakes
1 tsp oregano
Salt, to taste
A few spoons of water
1 cup boiled corn kernels For Salsa:
1 medium-sized tomato, finely chopped
1 small onion, finely chopped
A handful of fresh coriander, chopped
Salt, to taste
Crushed black pepper, to taste
1 ripe avocado, thinly sliced For Assembling:
1 lime (for squeezing on avocado)
Tortilla wraps, chapati, or paratha
Cheese (optional, for sprinkling)
Lettuce leaves (optional)
Oil, for cooking the wrap

Beans Avocado Tacos are a flavorful, plant-based dish that combines creamy avocado with seasoned beans, typically black beans or refried beans, wrapped in soft tortillas. This simple yet satisfying taco is popular in Mexican and Tex-Mex cuisine, offering a delicious balance of textures and flavors. The creamy avocado pairs perfectly with the hearty, savory beans, and the taco can be customized with various toppings, making it versatile and easy to adapt to different tastes.

Heat 2 tsp oil in a pan. Once heated, add the finely chopped onion and sauté for 5 minutes until soft. Add 1 cup boiled Rajma (kidney beans), 1.5 tsp Dhaniya powder, 1 tsp chili flakes, 1 tsp oregano, salt to taste, and a few spoons of water.

Cover the pan and cook on medium flame until the Rajma becomes tender. Once tender, mash the Rajma with a masher and set it aside.

In a mixing bowl, combine boiled corn, finely chopped tomatoes, finely chopped onion, and chopped coriander. Season the salsa with salt and crushed black pepper. Set aside.

Cut the avocado into thin slices and squeeze lime juice immediately to prevent browning.

Take a tortilla wrap (or chapati/paratha), and spread the Rajma mixture on one half. Sprinkle cheese on top of the Rajma mixture (optional). Fold the tortilla in half and cook on a pan with a little oil until golden and crispy on both sides.

Once cooked, remove from heat and open the wrap. Fill the taco with salsa, lettuce (optional), and avocado slices. Sprinkle with salt and pepper to taste, then fold and serve. Enjoy!
