Zero-Waste & Substitutes
Zero-waste: Look at your leftovers with love! Any uneven dough ends from the edges of your log can be rolled out and fried as quick, savory namak pare for your evening tea. If you have extra potato-paneer filling left over, simply stuff it into a paratha for the next morning’s breakfast or shape them into small tikkis and pan-fry them.
Substitutes: If you want a variation on the filling, mashed sweet potatoes or boiled raw bananas work wonderfully as a substitute for regular potatoes to bind the paneer.
