Ingredients

2 boiled sweet potatoes, cut into cubes For Crispy Sweet Potatoes:
2-3 tsp ghee
1.5 tsp cumin seeds (jeera)
2-3 finely chopped green chillies
1 small piece of finely chopped ginger
Crushed black pepper (to taste)
Sendha Namak (rock salt, to taste)
1/4 cup roasted and coarsely pounded peanuts
Fresh coriander leaves, chopped
Juice of 1 lime
1 cup hung curd For Raita:
Sendha Namak (rock salt, to taste)
Crushed black pepper (to taste)
1 small cucumber, finely chopped
Fresh coriander leaves, chopped (for garnish)

Boiled sweet potatoes are sautéed in ghee with cumin seeds, green chillies, and ginger until golden and crispy. They are then mixed with roasted peanuts and fresh coriander for added crunch. Paired with a refreshing cucumber yogurt raita, seasoned with rock salt and black pepper, this dish is both satisfying and nutritious. In a pan, heat 2-3 tsp of ghee over medium heat. Add 1.5 tsp cumin seeds. Once they crackle, add the finely chopped green chillies and ginger. Sprinkle some crushed black pepper.

Add the cubed sweet potatoes and sprinkle with Sendha Namak. Cook uncovered on a slow to medium flame until the sweet potatoes develop golden crispy sides, stirring occasionally.

Once crispy, add 1/4 cup roasted and coarsely pounded peanuts. Mix everything well. Turn off the heat and add chopped fresh coriander and squeeze lime juice over the top.

In a bowl, combine 1 cup hung curd with Sendha Namak, crushed black pepper, chopped cucumber, and coriander leaves. Mix everything gently until well combined. Your raita is ready.
