Heat a dry skillet or pan over medium heat. Add jeera (cumin seeds), saunf (fennel seeds), and ajwain (carom seeds) to the pan. Dry roast them, stirring constantly, until they become aromatic and slightly darker in color. |

Once roasted, remove the pan from the heat and transfer the roasted spices to a plate or bowl. Allow them to cool completely before proceeding to the next step. |

Once cooled, transfer the roasted spices to a spice grinder or mortar and pestle. Grind them into a fine powder. |
