Peel and measure out 1/4 cup of California Pistachios (Pista). Remove stems from green chillies. Peel garlic cloves if necessary. |

Measure out 100 grams of Feta cheese. Wash and pat dry the coriander (cilantro) bunch and mint leaves (if using). |

In a mixer jar, add the peeled California Pistachios (Pista), green chillies, garlic cloves, Feta cheese, coriander (cilantro), mint leaves (optional), and a pinch of salt. |

Pulse or grind on a coarse mode until the ingredients are coarsely ground. Do not make it into a fine paste; maintain some texture. |

Take the ground dip mixture out and spread it evenly on a serving plate. |
