Mango phirni is a creamy Indian dessert made with rice, milk, sugar, and mango puree. It offers a delightful fusion of rich flavors with the sweetness of mangoes. The rice is cooked until soft and blended with milk to achieve a thick consistency. The addition of mango puree adds a tropical twist, making it a perfect summer treat. Garnish with nuts and saffron for an extra touch of indulgence.

Coarsely grind 2 tablespoons of soaked Rice in a mixer and set aside. |

Blend 2 Mangoes in the mixer to make puree, then transfer it to a bowl. |

Heat 2 cups of Milk in a pan until slightly warm, then add the churned Rice. |

Allow the milk to boil and the rice to cook along with it, stirring continuously over slow to medium flame. |

Once the mixture thickens and rice is cooked, turn off the heat and let it slightly cool. |

Add 2 tablespoons of Jaggery to the mixture, stirring continuously. |

Transfer the mixture to a bowl and let it cool down. |

Once cooled, add the mango puree to the milk mixture (ensure the milk mixture is not warm). |

Mix well, then serve the phirni in a clay bowl (soaked overnight in water). |

Top with Mango pieces and blanched Pistachios before serving. |
