Sabudana ka Paratha is a popular dish during Navratri, made from soaked tapioca pearls (sabudana) and gluten-free flours like potato or buckwheat. The mixture is seasoned with spices, cumin, and sometimes herbs. It’s rolled out and cooked on a hot griddle until golden brown. This paratha is not only delicious but also provides energy during fasting. Often served with yogurt or chutney, it’s a festive favorite!

Dry roast 1 cup of Sabudana in a pan over low heat until slightly golden. Let it cool. |

Once cooled, churn it in a mixer to a fine powder. Set aside a handful for later use. |

In a mixing bowl, combine the Sabudana powder, 1.5 cups of boiled & grated potatoes, 2-3 chopped green chillies, chopped ginger, 1 tsp cumin seeds, rock salt, and chopped coriander. |

Mix everything well and knead into a dough. Cover and let it rest for 10 minutes. If the dough is too dry, add a little water to soften it. |

In a mixer jar, add 1 tbsp raw peanuts, 1 tsp cumin seeds, 2-3 green chillies, a small ginger knob, rock salt, fresh coriander, and lemon juice. Add a few ice cubes and churn to a fine chutney. Transfer to a bowl and set aside. |

Divide the dough into small balls. Dust each ball with the reserved Sabudana flour. Roll out each ball gently with a rolling pin to form a flat paratha. |

Heat a pan over medium heat. Place the rolled paratha on the hot pan. Cook until bubbles form, then flip it over. Apply ghee on the cooked side. |

Flip again, applying ghee on the other side until both sides are golden brown. |
