Ingredients

1/2 cup mixed nuts (cashews, almonds, walnuts)
1/2 cup dried fruits (raisins, cranberries, dates, dried pineapple, dried mango)
1 cup orange juice
3/4 cup brown sugar
3 tbsp water
1/4 cup oil
1 cup wheat flour
1 tbsp cocoa powder
1 tsp dry ginger powder
1 tsp cinnamon powder
1/2 tsp baking powder
1/4 tsp baking soda
Leftover orange juice (from soaking)
Extra mixed nuts and dried fruits
Honey or maple syrup

A No-Alcohol, No-Maida Christmas Cake is a healthier, alcohol-free alternative to traditional fruitcakes, made without refined flour. It uses whole wheat flour (atta) or other alternatives like almond flour for a more wholesome texture. The cake is packed with a variety of dried fruits and nuts, soaked in orange juice or apple juice instead of alcohol for flavor. Spices like cinnamon, nutmeg, and ginger add warmth and festive aroma. It’s a delicious, guilt-free treat for the holiday season, perfect for those with dietary preferences.

In a bowl, soak 1/2 cup mixed nuts and 1/2 cup dried fruits in 1 cup orange juice for 2-3 hours.

In a saucepan, melt 3/4 cup brown sugar with 3 tbsp water over medium heat until it boils. Turn off the heat and let it cool.

Once the caramel syrup has cooled, stir in 1/4 cup oil. Then, add the soaked nuts and dried fruits, excluding the orange juice (keep the orange juice aside).

In a mixing bowl, combine 1 cup wheat flour, 1 tbsp cocoa powder, 1 tsp dry ginger powder, 1 tsp cinnamon powder, 1/2 tsp baking powder, and 1/4 tsp baking soda. Mix everything well.

Add the wet mixture (from step 3) to the dry ingredients. If the batter is too thick, add a couple of tablespoons of the leftover orange juice to achieve the perfect batter consistency.

Pour the batter into a greased and lined baking tin. Sprinkle some extra mixed nuts and dried fruits on top. Bake in a preheated oven at 180°C for 45-50 minutes, or bake on the stovetop by placing the batter in a preheated large pan and cooking for about 60 minutes.
