100g White Sesame Seeds (Safed Til)

7-8 Walnuts

1/2 tsp + 1 tbsp Ghee

1 cup Fox Nuts (Makhana)

2-3 tbsp Edible Gum (Gond / Dink)

1 small piece of finely chopped Ginger (alternatively Ginger Powder can be used in laddu mixture)

No-added-sugar Til Ladoo is a healthy winter delicacy made with sesame seeds (til), jaggery or dates, and other nutritious ingredients like fox nuts, walnuts, and edible gum. These laddoos are rich in iron, calcium, and healthy fats, making them an energy-boosting snack during cold weather. The natural sweetness comes from dates, making them ideal for a sugar-free diet. They are easy to prepare and can be stored for up to a month.

Dry roast 100 gm white sesame seeds (safed til) in a pan until golden. Remove and set aside. Dry roast 7-8 walnuts separately and set aside. |

Add 1/2 tsp ghee to the pan and roast 1 cup fox nuts (makhana) until crisp. Transfer to a bowl. |

Add 1 tbsp ghee to the same pan. Fry 2-3 tbsp edible gum (gond/dink) until it puffs up. Transfer to a bowl. |

In the remaining ghee, fry a small piece of finely chopped ginger until fragrant. Add 250 gm seedless dates and fry until soft. Remove and set aside. |

Crush the fried edible gum (gond) and set aside. Using a mixer jar, coarsely grind the roasted makhana, walnuts, til, and dates separately. Keep aside approximately 2 tsp of sesame seeds for garnishing. |

In a large mixing bowl, combine the crushed makhana, walnuts, til, dates, and gond. Add some crushed black pepper (optional) and a pinch of salt. Mix well and add the reserved sesame seeds. |

Grease your palms with ghee. Take a small portion of the mixture and roll it into a round laddu shape. Repeat the process with the remaining mixture to make more laddus. |
