Ingredients

2 tsp Mustard seeds (Rai/Sarson)
2 tsp Cumin seeds (Jeera)
2 tsp Fennel seeds (Saunf)
1 tsp Onion seeds (Kalonji)
1 tsp Whole fenugreek seeds (Methi dana)
1 tsp Turmeric powder (Haldi)
2 tsp Kashmiri red chili powder
1 tsp Dry Mango powder (Amchoor)
2 tsp Black salt (Kala Namak)
1 tbsp Oil
2 medium Onions finely chopped
1 tbsp Ginger-Garlic paste
2/3 medium Tomatoes finely chopped
1 large Capsicum finely chopped
200 gms Paneer crumbled
Salt
Fresh Coriander finely chopped
water for cooking the masala
1 pack iD Malabar Parota
Cheese
onion Sliced

Golden, flaky layers of ID Malabar Parota toasted to perfection and stuffed with spicy achari paneer and melty cheese. Crispy outside, chatpata and comforting inside and super delicious and satisfying.

Make Achari Masala - Dry roast 2 tsp mustard seeds, 2 tsp cumin seeds (jeera), 2 tsp fennel seeds (saunf), 1 tsp onion seeds (kalonji) and 1 tsp whole fenugreek seeds (methi dana).

Remove from the heat and let it cool down.

Once it’s cool down, take this mixture into grinder jar, along with that add 1 tsp turmeric powder, 2 tsp kashmiri mirchi powder, 1 tsp amachoor powder, and 2 tsp black salt (kala namak).

Coarsely grind everything.

Make Achari Paneer Mixture - In a kadhai, take 1 tbs oil. Into that add 2 medium sized finely chopped onion and salt.

Let it fry for 2 minutes, and then add 1 tbs ginger garlic paste. And let the paste also cook for 2 minutes.

Then sprinkle 2 tbs prepared achari masala. And sprinkle some water.

Let masala cook for some time and then add finely chopped 2-3 medium size tomatoes and 1 big finely chopped capsicum.

Let them cook for couple of minutes, and then add 200 gm crumbled paneer.

Mix everything properly (if mixture is too dry, then sprinkle few drops of water) - Turn off the heat and at last, add finely chopped coriander.

Make Quesadillas - In a pan, take 1 Malabar parota. On the half side, spread achari paneer mixture.

Sprinkle some cheese on top and add some onion

Fold the half side and cook on both sides till you get nice golden color. (If you like you may sprinkle some oil on sides, as such not needed)
