1/4 tsp Baking Soda
A pinch of Saffron (Kesar)
8-10 Almonds (Badam), finely chopped (plus extra for topping)
Ghee (for greasing the appe pan)

I absolutely love baking healthy treats that are easy to make, and this Kesar Badam Appe Cake is my current favourite! I’ve skipped the maida and refined sugar completely, making it a guilt-free joy for everyone. Made right on the stovetop in an appe pan, it’s soft, spongy, and packed with the goodness of wheat, jaggery, saffron, and almonds. You have to try this one!

In a mixing bowl, take the jaggery. Add the dahi, milk, and oil to it.

Mix everything well until the jaggery gets completely melted. Keep this wet mixture aside.

In another bowl, take the regular wheat flour.

Add the cardamom powder, baking powder, and baking soda to the flour. Mix all these dry ingredients well.

Gradually add the dry ingredients mixture into the wet jaggery mixture.

Finally, fold in the chopped saffron and finely chopped almonds. Mix gently until you achieve a smooth, pouring consistency batter (as shown in the video).

Heat an appe pan on a slow flame and thoroughly grease each cavity with ghee.

Fill each cavity with the prepared batter and sprinkle some more chopped almonds on top.

Place a heavy, flat tawa below the appe pan so that gentle heat cooks the cake evenly without burning the bottom.
