Garam masala is a popular spice blend used in Indian cuisine. Its name translates to “hot spice mix,” but it doesn’t necessarily mean it’s extremely spicy; rather, it refers to the warming and aromatic nature of the spices used. Garam masala is known for its rich and complex flavor profile, and it is used to add depth and warmth to various dishes.

It is typically added towards the end of cooking or as a finishing touch to maximize its flavor.

Steps

Heat a pan over low-medium heat.
Roast cloves and black pepper for 5 minutes until fragrant.
Set aside.
In the same pan, roast green cardamom, black cardamom, star anise, nutmeg, and mace for 5-7 minutes.

Set aside.
Roast bay leaf briefly in the pan.
Add coriander seeds and roast for 5-6 minutes.
Then add cumin seeds and roast until fragrant.

Allow all roasted spices to cool completely.
Grind cooled spices into a fine powder using a spice grinder or blender.
Sieve the ground garam masala.
