Preparing festive snacks for guests usually means spending hours in the kitchen, but I have found the perfect way to make it completely effortless! I made these incredibly crispy Corn & Capsicum Fritters and a freshly ground Smokey Bell Pepper Dip in an air fryer. It’s healthy and saves me so much time while delivering chef-style perfection right at home.

These fritters are a fantastic gluten-free and protein-rich snack thanks to the besan, while being extremely low in fat since they are air-fried rather than deep-fried. The smokey dip is loaded with Vitamin C and antioxidants from the roasted red bell peppers and tomatoes. Estimated Nutritional Values (per serving, assuming 4 servings):

To Make Corn Fritters- In a bowl take, coarsely chopped raw corn. |

With that add finely chopped carrots, onion, a small piece of ginger, green chilli, finely chopped coriander, a few mint leaves finely chopped, 1/2 tsp Ajwain, 1/2 tsp Turmeric Powder and salt. |

For binding, add 1/2 cup besan, 2 tbsp rice flour and 1 tbsp oil |

Mix everything well and give it tikki shape. (Tip : For best results, please keep these fritters in a fridge for 2 hours before air frying) |

Place it in air fryer tray and cook at 190 to 200 degree for 20-25 minutes. But in between, flip it once for even air frying from all sides. In Kenstar air fryer, there is already a pre-set available called “pakoda” which you can select. |

To Make Smokey Bell Pepper Dip - In a bowl, mix one big size red bell pepper cut into big chunks, 2 medium size tomatoes cut into big chunks, a few cloves of garlic, 2 tsp oil, salt per taste, 1/2 tsp chilli flakes, 1/2 tsp oregano. Mix everything well |

Place everything in air fryer tray and cook at 200 to 220 degree for 20-25 minutes. But in between, mix everything once for even cooking from all sides. In Kenstar air fryer, there is already pre-set available called “Grill”, which you can select. |

Zero-Waste & Substitutes * Substitutes: If you prefer a no-onion, no-garlic (Jain/Sattvic) version, completely skip the onion and garlic in both the fritters and the dip. Add a little freshly grated ginger to the batter, and roast a small piece of raw papaya or zucchini with the bell peppers to maintain the dip's volume. * Zero-Waste Tip: If you are using fresh corn on the cob, save the stripped cobs! Boil them in water with some leftover vegetable peels to create a deeply flavorful, sweet corn and vegetable broth for your next soup or risotto. |
