Amritsari Paneer Bhurji – A Rich and Rustic North Indian Delight

Paneer lovers, rejoice! Amritsari Paneer Bhurji is a bold, flavour-packed dish that brings the essence of Punjab right to your plate. It’s a spiced and crumbled paneer preparation that’s rustic, creamy, and satisfying—perfect for weeknight dinners, family gatherings, or even a cozy brunch. What sets this version apart is the use of curd and besan, which elevate its richness and give it that unique Amritsari flair.

A Glimpse into Amritsari Flavours

Punjab’s culinary style is known for its hearty, bold flavours and generous use of dairy, spices, and slow-cooked techniques. Amritsari Paneer Bhurji lives up to this reputation with its combination of tangy curd, soft paneer, and warming spices. It has the depth of flavour you’d expect in restaurant food but is simple enough to cook at home.

Curd – The Secret to Creaminess and Tang

One of the star ingredients in this recipe is fresh curd (dahi). Unlike typical bhurji preparations, this recipe mixes curd with spices before adding it to the pan. The curd not only gives a creamy texture but also brings a tangy note that balances the heat from red chilli and green chilli. It also acts as a natural tenderiser, helping all the flavours blend beautifully.

The Nutty Touch of Besan

Besan (gram flour) is the game-changer in this Amritsari twist. Lightly roasted in oil and butter, besan adds a nutty aroma and a subtle earthy flavour to the dish. It also slightly thickens the mixture, making the bhurji rich without needing extra cream. Besan is packed with protein and fiber, making the dish more nutritious and wholesome.

The tempering process begins with cumin seeds, followed by crushed ginger, garlic, and green chilli. This combination builds the base of the dish, releasing deep flavours that infuse the onions and tomatoes. The addition of kasuri methi adds a classic Punjabi aroma and a slightly bitter undertone that perfectly complements the paneer.

Tomatoes and Onions – The Bhurji Backbone

The finely chopped onions and tomatoes are sautéed until they melt into the masala. Tomatoes add a slight sweetness and acidity, while onions bring body to the dish. This mixture is then combined with the curd-based spice blend to create a well-balanced gravy that holds the crumbled paneer together.

Paneer – The Star Protein

Paneer is crumbled by hand and added towards the end, absorbing the flavours while retaining its soft, melt-in-the-mouth texture. With 300 grams of paneer, the dish becomes a good source of protein, especially for vegetarians. Paneer also contains calcium, which supports bone health, and is easy on the digestive system.

Once cooked, the bhurji is garnished with coriander, julienned ginger, chopped tomatoes, and green chillies. These toppings not only make the dish visually appealing but also add fresh, crisp textures and a final layer of flavour.
