Indulge Guilt-Free: My Signature No Added Sugar High ProteinPecan Cheesecake

Welcome to Meghna’s Food
Magic, where I believe that
healthy eating should never
mean sacrificing flavor. That’s
why I’m so excited to share my
signature recipe for a No Sugar
High Protein Pecan
Cheesecake—a dessert that’s not
only delicious but also
wonderfully good for you. This
recipe is an innovative take on a
classic, created to be a guilt-free
indulgence, especially during
the festive season when sweet cravings are at their peak. It’s a recipe you can easily make at home with simple, accessible ingredients. The secret to this healthier cheesecake lies in its base. Unlike conventional cheesecakes that rely on heavy, high-fat cream cheese and refined sugar, my recipe utilizes hung curd or Greek yogurt. This simple swap makes all the difference. Hung curd is a protein powerhouse, and its natural tang provides a perfect balance to the sweetness without adding unnecessary fats and calories. By using it as the foundation, this cheesecake becomes a much more nutritious choice, offering a satisfying amount of protein that keeps you full and energized.

For sweetness, I’ve completely eliminated refined sugar. Instead, I use natural sweeteners like honey or maple syrup. These provide a delightful, gentle sweetness and are a better alternative for your body. This mindful approach to ingredients allows us to create a dessert that we can truly enjoy without the dreaded sugar crash that often follows traditional Indian sweets. While we all love our festive delicacies, they often come with an excessive amount of sugar, and this recipe offers a delicious way to enjoy a sweet treat with a modern, healthier twist.

The star of the show, for me, is the topping: pecan nuts. Pecans have a rich, buttery flavor that is unmatched, especially when roasted. I’ve found that pecans truly roast the best amongst all the nuts, intensifying their natural sweetness and lending an incredible depth of flavor and a satisfying crunch to the dessert. They’re not just for taste, though; pecans are loaded with heart-healthy fats, fiber, and antioxidants, making them a fantastic addition to this nutritious cheesecake.

The best part? This recipe is incredibly straightforward and flexible. It’s perfect for both seasoned bakers and beginners. You can achieve a perfect result whether you choose to bake it in an oven or steam-cook it on your stovetop.
Here’s a detailed look at the simple steps to create this magical dessert:
Preparing the Cheesecake Mixture:

1. Begin with 220 grams of hung curd. To make hung curd, place regular yogurt in a muslin cloth and hang it to drain excess whey for 3-4 hours. Alternatively, use 220 grams of pre-made Greek yogurt.

2. In a mixing bowl, add the hung curd or Greek yogurt. Its thick and creamy texture forms the base of our healthy cheesecake.

3. Pour in 3 tablespoons of honey or maple syrup. Remember, you can adjust the quantity based on how sweet you prefer your dessert.

4. Next, measure out 15 grams of corn flour. This will act as a binding agent, helping the cheesecake set beautifully. Add it to the bowl.

5. If you desire an extra boost of protein, you can add 1 scoop of your favorite Protein Powder to the mixture at this stage. This is optional but enhances the nutritional value.

6. Now, with all the ingredients in the bowl, use a whisk or a spatula to mix everything together thoroughly. Ensure there are no lumps and the batter is smooth and homogenous.
Cooking the Cheesecakes:

7. Prepare your cupcake molds by lining them with paper liners. This step is crucial for easy removal of the cheesecakes once they are cooked and chilled.

8. Carefully pour the prepared cheesecake mixture evenly into the lined cupcake molds, filling each one to a similar level.

9. For Baking: Preheat your oven to 190°C (375°F). Place the filled cupcake molds on a baking tray and slide it into the preheated oven.

10. Bake for approximately 20 minutes. The cheesecakes are ready when they look set around the edges but might still have a slight wobble in the center. For Steam Cooking: If you are steam cooking, arrange the filled cupcake molds on a steamer rack inside a pot with boiling water. Ensure the water level is below the rack. Cover the pot tightly and steam for 25-30 minutes, or until a toothpick inserted into the center of a cheesecake comes out clean.
Cooling and Chilling:

11. Once cooked (baked or steamed), remove the cheesecakes from the oven or steamer. You might notice a slight deflation as they begin to cool – this is normal.
12. Allow the cheesecakes to cool down completely to room temperature while still in their molds. This prevents them from cracking due to a sudden temperature change.
13. After they have cooled, carefully transfer the entire cupcake mold tray into the refrigerator. Chill for a minimum of 2 hours to allow the cheesecakes to firm up properly and develop their signature texture.
Preparing the Roasted Pecan Topping:

14. While the cheesecakes are chilling, prepare the pecan topping. Take ½ cup of pecan nuts and spread them in a single layer in a dry pan.

15. Dry roast the pecans over medium-low heat, stirring frequently, for about 5-7 minutes until they become fragrant and slightly darker in color. Be careful not to burn them.

16. Once roasted, immediately remove the pecans from the pan and transfer them to a chopping board. Chop them coarsely into smaller pieces.

17. In the same pan, add the chopped roasted pecans.

18. Pour in 2-3 tablespoons of maple syrup or honey.

19. Add ½ teaspoon of cinnamon powder or a few drops of vanilla essence to the pecan mixture for added flavor.

20. Then add a pinch salt to enhance the flavor of the pecan nuts.

21. Cook this mixture on low heat for about 5 minutes, stirring gently, until the pecans are well coated with the syrup and it slightly thickens.

22. Remove the pan from the heat and transfer the warm pecan mixture to a clean bowl to cool completely.
Final Assembly:

23. Gently peel off the paper liners from the chilled cheesecakes.

24. Spoon a generous amount of the prepared roasted pecan topping evenly over the top of each cheesecake. The contrast in textures and flavors is simply divine!

25. For the final step, garnish them with edible flowers. But this step is optional, you are free to get creative and use whatever you like.
Ps. If pecans are not available, you can easily substitute them with walnuts or almonds.

With the first bite, you’ll experience a wonderful contrast: the smooth, light base of the cheesecake melting in your mouth, followed by the satisfying crunch and juicy sweetness of the roasted pecans. It’s an interesting and delightful experience for your palate. This is a modern and healthy twist on a signature dessert that proves that healthy eating can be both easy and incredibly delicious.
