Is Your Rotlo Sitting in the Kitchen? Turn It into Vagharelo Bajri Rotlo

When hunger strikes, do you crave something quick, wholesome, and packed with flavor? Most people think of bajra rotlo as a dry, simple millet flatbread, but Vagharelo Bajri Rotlo transforms it into a mouthwatering dish! With its rich buttermilk gravy, fiery garlic chutney, and warming spices, this Kathiyawadi classic is the perfect way to turn leftovers into a comforting, soul-satisfying meal.

Bajra rotlo is often seen as a plain, dry, and difficult-to-eat dish. While it’s nutritious, people skip it because they don’t know how to make it flavorful. But what if I told you that with just a few ingredients, you can transform it into a spicy, tangy, and hearty meal that will leave you craving more?

Benefits of Vagharelo Bajri Rotlo

This is a simple yet nutritious dish that transforms leftover rotlo into a flavorful meal. Bajra, known for its high fiber, protein, and iron content, supports digestion, boosts energy, and strengthens immunity. The addition of buttermilk enhances gut health by introducing probiotics, making the dish light and easy to digest. Instead of eating dry rotlo the next day, this method softens it while infusing it with a rich blend of garlic, chili, and whole spices that add both warmth and depth of flavor. This quick, one-pan recipe requires minimal effort, making it an ideal choice for busy days when a wholesome and satisfying meal is needed.

How to Make Vagharelo Bajri Rotlo –

  1. Prepare the Garlic Chutney – Grind 1 tsp jeera, 5-6 garlic cloves, 1.5 tsp Kashmiri red chili powder, and salt into a coarse chutney. Set aside.
  2. Make Buttermilk – Whisk 1.5 cups of thick curd with 1 cup of water until smooth.
  3. Prepare the Tadka – Heat 2 tbsp oil in a pan, add 1 tsp rai, 1 tbsp sesame seeds, 1 tsp chopped ginger, and the garlic chutney. Let it sizzle.
  4. Cook the Spiced Gravy – Add 3-4 finely chopped green onion whites, salt, and 2 chopped tomatoes. Stir in ½ tsp haldi, 2 tsp dhaniya powder, ½ tsp garam masala, and ½ tsp hing. Cook until soft.
  5. Bring Everything Together – Pour in the buttermilk, bring it to a boil, then add 2 crumbled bajra rotlas. Stir well and garnish with onion greens and fresh coriander.
