I am giving the traditional Gujarati Handvo a brand new, super healthy, and nutritional avatar! By swapping out regular white rice or suji for complex carbs and protein-rich whole ingredients, I have turned this classic snack into an absolute powerhouse breakfast.

Take 1/2 cup soaked kala chana and 1 cup soaked moong in a mixer jar. |

- Add 1/4 cup water and grind it coarsely. - Into that mixture, add 1 cup Ragi Atta and 1/2 cup sour curd. Mix everything well and thick smooth batter. |

If your batter is very thick, then only water, otherwise not needed. |

Into that add some mix vegetables like finely chopped 1 onion, 1 small piece of finely chopped carrot, 2 green chillies finely chopped, 1 big bunch of coriander chopped, 1/4 cup of boiled sweet corn, 1/4th cup fresh green peas. |

Now add masalas - like salt, 1 tsp turmeric, 2 tsp Dhaniya powder, 1.5 tsp Kashmiri Mirchi Powder, 1 tbs jaggery (optional). |

Mix everything well, and the batter consistency should be as shown in the video. |

At last, add 1 tsp fruit salt (ENO) to make fluffy Handvo. |

Now in a kadhai, take 2-3 tsp oil, once it’s hot, add 1 tsp mustard seeds, 1 tsp white sesame seeds and 1/2 tsp asafoetida and few curry leaves. |

Once everything crackles, pour 1/2 cup prepared Handvo batter and cover the kadhai with a lead. |

Let the Handavo cook on medium flame on both the sides till you get the golden color. |
