For tamarind water- - Take 1/2 cup tamarind (imli), soak it in 1 cup hot water for half an hour. |

Mash it with hand and strain the pulp. |

Into that add 1 more cup chilled water, black salt as per taste, 1 tsp chili flakes, 1 tsp roasted cumin seeds powder and 1 tsp chat masala. |

- Add 1/4 cup jaggery powder to balance the sourness of tamarind. At last, add fresh coriander. |

For Chat Mixture- - In a pressure cooker, 1 cup overnight soaked black chana. |

With that add 1 medium size sliced onion, 3 to 4 garlic cloves, salt as per taste and some water. |

Pressure cook this chana on medium flame upto 5 whistles. |

Once the cooker gets cool down, mash the chana coarsely. |

Into that add fresh finely chopped green chillies, 2 medium size cucumbers finely chopped, 2 medium size ripe tomatoes finely chopped, 1 onion finely chopped, 1 big size boiled potato cut into cubes, fresh coriander, black salt as per taste, chili powder as per taste, 1.5 tsp roasted cumin seeds powder and some chat masala per taste. Mix everything well. |
