Ingredients

1/2 cup Yellow Lentils (Moong Dal soaked in water for 2 hours)
1/2 tsp Turmeric Powder (Haldi)
1 small Cinnamon stick (Dalchini)
4-5 Bay Leaves (Tej Patta)
Salt as per taste
A bunch of Spinach (Palak)
2-3 Green Chillies
2 tsp Butter
Cumin Seeds (Jeera - optional)
5-6 Finely chopped Garlic Cloves
1 small piece Finely chopped Ginger
Crushed Black Pepper
1 Lemon Juice
2 spoons Oil
Bread slices (cut into small crouton shape pieces)
Fresh Cream to garnish

Spinach is a good source of vitamins A, C, and K, while lentils offer protein, fiber, and various minerals. Lentils are beneficial for digestive health due to their high fiber content.

In a pressure cooker, combine 1/2 cup soaked Moong Dal, 1/2 tsp Turmeric Powder, 1 small Cinnamon stick, 4-5 Bay Leaves, and Salt. Pressure cook for 2 whistles.

Remove the Cinnamon stick and Bay Leaves.

Blanch a bunch of spinach in hot water for 5 seconds, then transfer it to ice water to cool.

Blend the blanched spinach with 2-3 Green Chilies to make a puree.

Blend the cooked dal to make it smooth.

Heat 1 tsp Butter in a pan. Add optional Cumin Seeds, 3-4 finely chopped Garlic Cloves, finely chopped Ginger, crushed Black Pepper, and sauté.

Add the blended dal to the pan, bring it to a boil, then reduce the heat.

Stir in the Palak puree. Adjust consistency with water, if needed.

Add Salt as needed and turn off the heat. Stir in 1 Lemon Juice.

Heat a pan and add Butter, 2 spoon Oil, 2 finely chopped Garlic Cloves, Salt, and crushed Black Pepper.

Cut bread slices into small cubes.

Pour the prepared butter-garlic mixture over the bread cubes. Keep aside some fried garlic for garnish.

Roast these bread cubes in the pan until they turn golden-brown and crunchy.
