Ingredients

Approx 20 gm Cardamom (Elaichi) Mildly roast and churn the spices
1 star Anise (Chakra Phool)
1/2 Nutmeg (Jaiphal)
Approx 5 gm Black Pepper (Kali Mirchi)
10-15 Cloves (Laung)
Approx 20 gm Cinnamon (Dalchini)
60 gm Dry Ginger Powder (Sonth)
1 cup Water To make Chai
4 tsp Sugar (or as per taste)
2 tsp Chai Patti
Approx 1/2 tsp Chai Masala
1 cup Milk

Chai masala powder, also known as tea masala, is a blend of aromatic spices commonly used to prepare traditional Indian masala chai, a spiced tea. This spice mix is added to black tea along with milk and sweetener to create a warming, flavorful beverage.

Heat a pan over low heat and mildly dry roast cardamom, star anise, nutmeg, black pepper, cloves, and cinnamon separately until they release their aromas. Be cautious not to burn them.

Allow the roasted spices to cool down.

Once cooled, grind these spices in a spice grinder or mortar and pestle until you get a fine powder.

Transfer the powdered spices to a mixing bowl.

Add the dry ginger powder (Sonth) and mix it thoroughly to create your chai masala powder.

To Make 2 Cups of Chai, In a pan, take 1 cup of water.

Add 4 teaspoons of sugar and 2 teaspoons of chai patti (tea leaves).

Once the mixture boils, add approximately 1/2 teaspoon of the chai masala powder you prepared. Stir well.

Let it boil for a moment to allow the spices to infuse and release their aroma.

After the spice-infused water boils, add 1 cup of milk.

Let the mixture come to a boil while stirring occasionally.

Once the chai reaches your desired color and strength, strain it into cups using a fine mesh strainer.
