One such beloved preparation is Raw Mango Murabba, a sweet-tangy preserve made with shredded raw mangoes, sugar, and aromatic spices. This jam-like condiment is more than just a spread—it’s a heritage recipe passed down through generations and enjoyed for its unique flavour, health benefits, and long shelf life.

What Is Raw Mango Murabba?

Raw Mango Murabba, often called kairi ka murabba, is a sweet preserve made using shredded raw mangoes, sugar syrup, and spices like cardamom, cinnamon, and saffron. It’s slow-cooked until the sugar thickens into a syrupy glaze that coats the mango, giving it a shiny, jam-like texture. Typically stored in glass jars, it can be enjoyed for up to a year without refrigeration when sealed properly.

Traditionally, murabba is served with chapatis, parathas, or even toast. It also pairs well with khakhra or as a side with Indian thalis. The blend of spice, tartness, and sweetness makes it a versatile condiment for all age groups.

Raw mangoes are not only delicious but are also loaded with nutrients. They’re rich in vitamin C, which helps boost immunity and protects against heatstroke—making this murabba ideal for Indian summers. The fibre in mangoes supports digestion, while their antioxidant properties help reduce inflammation and oxidative stress.

Adding cardamom and cinnamon not only elevates the flavour but also enhances digestion and helps regulate blood sugar levels. The process of making murabba is simple and requires minimal ingredients. Here’s how to make this sweet-tangy delicacy at home:

  1. Prep the Mangoes: Peel and shred 400 grams of raw mango flesh using a grater. The shreds should be even and fine for better texture.
  2. Mix with Sugar: In a mixing bowl, combine the shredded mango with 700 grams of sugar. Let it rest for 15-20 minutes, allowing the sugar to dissolve and release moisture from the mangoes.
  3. Cook the Mixture: Pour the mango-sugar mixture into a heavy-bottomed pan and cook over medium heat. Stir occasionally to prevent sticking.
  4. Check Consistency: As the mixture thickens, watch for the one-string consistency in the sugar syrup. This ensures the murabba is well-cooked and will preserve well.
  5. Add Aromatics: Turn off the heat and add 1 small cinnamon stick, a pinch of salt, 4-5 crushed cardamom pods, and a few saffron strands. Stir gently to mix the spices evenly.
  6. Cool and Store: Let the murabba cool completely before transferring it to a sterilised, airtight glass jar. Store it in a cool, dry place.

Once prepared, the murabba can be enjoyed year-round and is perfect for enhancing everyday meals or festive platters.

Serving Ideas

Spread it over toast for a sweet breakfast, pair it with crispy parathas, or simply enjoy a spoonful on its own. It’s also a great side to balance spicy or dry Indian meals. Many even enjoy it with plain rotis and ghee as a nostalgic childhood snack.
