1 cup Bajra Flour (Pearl Millet)

1/2 cup Yellow Moong Dal (Soaked & Ground)(adds fluffiness)

1 tsp Ginger-Green Chili Paste

2-3 tbsp Curd (Dahi)(for slight tang and softness)

1 medium Finely chopped Onion

1/2 cup Finely chopped Capsicum
-
1/4 cup Sweet Corn(optional, for winter vibe)

a handful Finely chopped Coriander
-
thin juliennes Beetroot(for topping)

thin juliennes Ginger(for topping)

1/4 tsp Turmeric Powder

1/2 tsp Red Chili Powder

1/2 tsp Fruit Salt (Eno) or Baking Sodaadd just before cooking for fluffiness

In a mixer jar, take 1 cup soaked (soaked for 2-3 hours) Moong Dal. Out of that, remove 2 tbs and keep it aside for later use. |

With that, in a blender jar, add a small piece of ginger, 3-4 green chillies and few spoons of water (Do not add too much water else batter will become very runny / watery). |

Into a bowl, into that add 2 tbs soaked whole moong dal we had kept aside earlier, 1/2 cup Bajra ka Atta, Salt per taste, 3/4th cup chopped coriander, 1 small finely chopped capsicum, a small piece of carrot finely chopped, 1 medium size onion finely chopped or you can add any vegetables of your choice. |

For masalas, add 1/2 tsp Turmeric powder, 1 tsp Kashmiri Mirchi Powder, 150 gm Paneer (optional or you may add cheese too). |

Mix everything well. If needed add water to adjust consistency. |

Just cooking moonglet, add 1.5 tsp Eno. Mix everything well. |

Now in a pan, add 1 tbs oil or butter. Sprinkle some mustard seeds (rai ke daane), asafoetida (hing), white sesame seeds (safed til). |

Once you hear crackling sound, add required quantity of moonglet batter. |

On the top sprinkle some julienne of carrot and beetroot, chopped coriander, some more white sesame seeds and some panner or cheese. |

Cook moonglet on medium flame on both sides till you get golden color. |
