1/2 Cup Suji (Semolina)
1/4 Cup Sour Curd
Water
Salt To Taste
1/2 Tsp Haldi Powder
1 Small Thinly Shredded Carrot
Some Finely Chopped Dhaniya (Coriander)
2 Pounded Green Chillies
A Small Piece Of Ginger Pounded
1 Small Packet Of Fruit Salt (Eno)
Red Chilli Powder (For Sprinkle)
2 Tbsp Oil
1 Tsp Mustard Seeds
1/2 Tsp Hing (Asafoetida)
A Few Curry Leaves
Bhavnagari Gathiya (A Special Fried Snack)
2-3 Green Chillies
A Big Bunch Of Cleaned Coriander
1/2 Lemon
A Few Ice Cubes

A modern twist on the traditional Gujarati favorite, this dhokla uses oats and suji (semolina) instead of besan—making it lighter, fiber-rich, and heart-healthy. Paired with a unique coriander-gathiya chutney, it’s a wholesome breakfast, tea-time snack, or lunchbox option that’s both delicious and guilt-free. Perfect for weight-watchers and families alike!

In a mixer jar, blend together 1 cup of oats and 1/2 cup of Suji (Semolina) to create a fine powder.

To this, add 1/4 cup of sour curd and water as needed to form a thick batter. Let the batter rest for half an hour.

After resting, add salt to taste, 1/2 tsp Haldi powder, one small thinly shredded carrot, some finely chopped dhaniya (coriander), 2 pounded green chillies and a small piece of ginger. Mix well!

If your batter is too thick, adjust the consistency by adding a little water.

Prepare your steamer, and just before steaming, add in 1 small packet of fruit salt (eno) into batter. Make sure to pour the batter into the steamer immediately for a fluffy finish!

Mix well and pour the batter into a well-greased plate. A sprinkle of red chilli powder on top adds a perfect touch.

Steam the dhokla for 15-20 minutes on high flame, covering the steamer well.

Once done, remove from the steamer and let it cool slightly.

For the tadka, heat 2 tbsp oil and add 1 tsp mustard seeds, 1/2 tsp hing (asafoetida), and a few curry leaves.

Pour the tadka over the steamed dhokla, cut it into pieces, and enjoy with a cup of tea or a refreshing green coriander mint gathiya chutney!

For the Chutney, In a mixer jar, combine Bhavnagari Gathiya (a special fried snack), 2-3 green chillies, a big bunch of cleaned coriander, juice from 1/2 a lemon, and a few ice cubes. Churn to a smooth consistency, add salt to taste, and it's ready to serve!
