Bharwa Baingan ki Sabzi is a delicious North Indian dish made with small, tender eggplants (baingan) stuffed with a flavorful mixture of spices and herbs.

Slit and soak 7-8 eggplants (Baingan). |

In a mixer jar, add roasted peanuts, sev, coriander seeds, dry coconut, fennel seeds, white sesame seeds, cinnamon stick, Dhaniya-Jeera Powder, a pinch of turmeric powder, red chili powder (to taste), sugar (optional), and garam masala. |

Coarsely grind to make a masala mixture. |

Add salt to taste and mix it. Then, fill the Baingan with this masala. |

Now, heat 2 tablespoons of oil. |

Add cumin seeds, mustard seeds, cinnamon stick, bay leaves, dry red chilies, white sesame seeds, fennel seeds, a pinch of asafoetida powder, and finely chopped ginger (optional). |

Fry well and add 2 medium-sized finely chopped tomatoes. |

Add salt, a pinch of turmeric powder, Dhaniya-Jeera Powder, and red chili powder (to taste). |
