Ingredients

7-8 Eggplant (Baingan), slit and soak in water For masala-
1/4 cup Mildly roasted Peanuts
1/4 cup Sev (alternatively 2 tbs dry roasted besan can be used)
1 tbsp Coriander Seeds (Dhaniya)
1 tbsp Dry Coconut
1 tsp Fennel Seeds (Saunf)
1 tsp White Sesame Seeds (Safed Til)
1 small Cinnamon Sticks (Dalchini)
1/2 tsp Dhaniya-Jeera Powder
Pinch of Turmeric Powder (Haldi)
Red Chilli Powder (as per taste)
2 tsp Sugar (optional)
1/2 tsp Garam Masala
Salt as per taste
2 tbsp Oil For sabzi-
1 tsp Cumin Seeds (Jeera)
1 tsp Mustard Seeds (Rai)
1 small Cinnamon Sticks (Dalchini)
3-4 Bay Leaves (Tej Patta)
2 Dry Red Chillies
1 tsp White Sesame Seeds (Safed Til)
1/2 tsp Fennel Seeds (Saunf)
Pinch of Asafoetida Powder (Hing)
1 Finely chopped small Ginger Knob (optional)
2 Medium sized finely chopped Tomatoes
Salt as per taste
Pinch of Turmeric Powder (Haldi)
1/2 tsp Dhaniya-Jeera Powder
Red Chilli Powder (as per taste)
Some big Green Chillies, cut into pieces (optional)
1/2 cup Water
Some Green Peas
Freshly chopped Coriander

Bharwa Baingan ki Sabzi is a delicious North Indian dish made with small, tender eggplants (baingan) stuffed with a flavorful mixture of spices and herbs. 

Bharwa Baingan ki Sabzi is typically served with roti or rice. It pairs well with plain yogurt or raita to balance the spiciness.

Slit and soak 7-8 eggplants (Baingan).

In a mixer jar, add roasted peanuts, sev, coriander seeds, dry coconut, fennel seeds, white sesame seeds, cinnamon stick, Dhaniya-Jeera Powder, a pinch of turmeric powder, red chili powder (to taste), sugar (optional), and garam masala.

Coarsely grind to make a masala mixture.

Add salt to taste and mix it. Then, fill the Baingan with this masala.

Now, heat 2 tablespoons of oil.

Add cumin seeds, mustard seeds, cinnamon stick, bay leaves, dry red chilies, white sesame seeds, fennel seeds, a pinch of asafoetida powder, and finely chopped ginger (optional).

Fry well and add 2 medium-sized finely chopped tomatoes.

Add salt, a pinch of turmeric powder, Dhaniya-Jeera Powder, and red chili powder (to taste).

Fry until the tomatoes become mushy.

Add big green chilies (optional) and the churned masala mixture.

Add the stuffed Baingan and more water if the gravy is too thick.
