Ingredients

1/4 cup chopped cashews
1/4 cup chopped almonds
1/4 cup chopped walnuts
2 tbsp poppy seeds
1/2 cup dry shredded coconut
5-6 cardamom pods (powdered)
2 tbsp dry ginger powder
1 tbsp Ganthoda (Indian dried ginger powder)
3-4 tbsp ghee
1/4 cup edible gond (edible gum)
1L full-fat milk
Less than 1/2 cup jaggery (adjust to taste)
Extra ghee, almonds, and pistachios for garnish

Winter is here, and have you tried GOND KI PEND (Gond Ka Halwa)? This delightful treat is not just delicious, but it’s also packed with health benefits! it’s very good for easing joint and body pain. Plus, it boosts your energy levels, making it perfect for those chilly winter days!

In a mixing bowl, combine 1/4 cup each of chopped cashews, almonds, and walnuts. Add 2 tbsp poppy seeds, 1/2 cup dry shredded coconut, 5-6 powdered cardamom pods, 2 tbsp dry ginger powder, and 1 tbsp Ganthoda. Mix well and set the mixture aside.

Heat 3-4 tbsp ghee in a kadhai (wok) on medium flame.

Once the ghee is hot, add 1/4 cup+ edible gond. Fry it until it puffs up, which should take about 10 minutes on medium flame. Let it cool and then coarsely crush it.

In the same kadhai, heat 1 liter of full-fat milk. Once the milk is hot, add the crushed gond and mix until it melts and the milk starts to curdle.

Add the prepared Pend mixture and less than 1/2 cup of jaggery (adjust the sweetness to your taste). Stir continuously until the mixture thickens and resembles a halwa-like consistency.
