This is an instant dosa which I have given a Jowar twist, and the pumpkin chutney is a quite creative combination you must try instead of regular chutney.
Jowar flour is rich in fibre for digestive and heart health, while pumpkin is packed with Vitamin A for vision and immunity. Together, they form a powerful, nutrient-dense combination that supports a wide range of bodily functions, from blood sugar management to skin health.

Steps

1
Done

Pumpkin Chutney- - In a pan take 2 tsp oil, into that add 1 tsp Jeera, 2-3 cloves of garlic, 1.5 tbs chana dal, 3-4 Dry red chillies, 6-7 black peppercorns.

Saute everything till you get nice golden color on chana dall. Then add 1.5 tbs Tamarind pulp, 200 gm chopped pumpkin (remove the skin and chop pumpkin into small dice), a few curry leaves and salt.

3
Done

Cover with a lead and let it cook till pumpkin becomes tender. Once it cools down, blend it in a mixture jar, add few spoons of water and blend it smooth.

For tampering (Tadka), take 1 tbs oil. Once it’s heated, add 1 tsp mustard seeds, 1.5 urad dal, 1/2 tsp asafoetida and a few curry leaves.

Now remove the batter into a bowl, add salt per taste and add 1/2 tsp baking soda.

9
Done

Mix everything well and leave the batter aside for 15 minutes.

10
Done

Now heat the pan on medium flame, grease it with oil and pour ladder-full of batter on tawa (Tip : Do not spread too thin).

11
Done

Let this dosa cook on medium flame only, in a minute you will see lots of bubbles on the top; at that time drizzle some oil/butter/ghee.

12
Done

When the surface becomes dry, flip on the other and cook for couple of minutes.

Enjoy this healthy Jowar set Dosa and Pumpkin Chutney over Lunch, Dinner or Breakfast.
