Mix Vegetable Suji Handvo is a savory Indian snack made from semolina (suji), curd, and a variety of vegetables like carrot, cabbage, beetroot, and peas. The batter is flavored with garlic, ginger, green chilies, cumin, and coriander, with a touch of sugar and salt. A pinch of cooking soda makes the handvo light and fluffy. The batter is tempered with mustard seeds, sesame seeds, and curry leaves before being cooked until golden brown. It’s a nutritious and delicious dish, perfect for breakfast or a tea-time snack.

In a mixing bowl, take 1 cup semolina (suji). Add 1/2 cup curd (dahi) and mix well. |

Gradually add 1/4 cup water (or as required) and mix until a smooth batter is formed. The batter should be thick yet smooth. Cover the bowl and set it aside for 30 minutes to allow the semolina to absorb moisture. |

After 30 minutes, add the other ingredients to the batter. Season with salt (to taste) and a little sugar (as per taste). Mix everything well until evenly combined. |

Add 1/2 tsp cooking soda to the batter and mix gently. This will help the handvo rise and become fluffy. |

Heat 1 tablespoon oil in a pan. Once the oil is hot, add, rai, til, hing and kadi patta. Let the mustard seeds splutter and the sesame seeds turn slightly golden. |

Pour a ladleful of the batter into the pan to form small handvo (savory semolina cakes). Cover the pan with a lid and cook on slow to medium flame for about 4-5 minutes, until the underside turns golden brown. |

Once the bottom is cooked and golden, flip the handvo gently to cook the other side. Continue cooking until both sides are nice and golden-brown. |
