Varan Bhaat is a traditional Maharashtrian dish consisting of plain steamed rice (bhaat) served with a simple and comforting lentil soup (varan). It is often garnished with fresh coriander and served hot with a dollop of ghee on top.

In a pressure cooker, take 1 cup Pigeon Pea Seeds (Tuvar Dal). Add enough Water to cover the dal. Add Salt as per taste and 1/2 tsp Turmeric Powder (Haldi). |

Close the lid of the pressure cooker and cook up to 3 whistles or until the dal is soft and cooked through. |

In a separate vessel, take 1 cup of Rice and rinse it well. Add 1.5 cups of Water and Salt as per taste. Cover the vessel with a lid and cook the rice until done. |

Once the pressure cooker cools down, open the lid and whisk the cooked dal until smooth. Heat a pan and transfer the cooked dal into it. |

Add a pinch of Asafoetida Powder (Hing) and 1 tsp Jaggery (Gur). Mix well and cook the dal until it comes to a boil, ensuring all flavors are well combined. |

Serve the hot and delicious Varan Bhaat. Optionally, serve with Aloo Sabji (Potato Curry) on the side. |
