Take 400 gm bitter gourd, peel the skin, and cut it into round shapes. Sprinkle some salt over the pieces and mix well. Leave the karela aside for half an hour to let the water ooze out. |

Squeeze out the excess water from the bitter gourd pieces and keep them aside. (This crucial step significantly decreases the bitterness!) |

In a pan, heat 2-3 tbsp oil. Add 1/4 cup broken cashews and fry until they turn a mild golden colour. Remove and keep them aside. |

In the same pan, fry the squeezed bitter gourd pieces until they are almost 50% done or the edges turn golden. Remove from the pan and keep aside. |

In the remaining oil, add 1 tsp mustard seeds, 1 tsp cumin seeds, 1/2 tsp hing powder, and 1 tbsp white sesame seeds. Cook everything in the oil for about 5 minutes until fragrant. |

Now, add the already cooked karela (bitter gourd) back to the pan. Add the spices: 1 tsp haldi powder, 1.5 tsp mirchi powder, and 2 tsp coriander powder. Add some salt if required (remember you already salted the karela earlier). |

Drizzle a little water and mix everything well. Cover the pan with a lid and let it cook on a slow to medium flame for 5-7 minutes. |

After that, add the fried cashews, 1 tsp aamchur powder, and a small piece of jaggery. Mix everything well, and again cover and cook for 5 more minutes. |
