1.5 litres full-fat milk
1.5 tablespoons lime juice
1/2 cup organic jaggery powder (Bharat Vedika)
2 tablespoons water (for melting jaggery)
2 tablespoons A2 Gir Cow Ghee (Bharat Vedika)
1 teaspoon cardamom (elaichi) powder
Diluted Kashmir saffron (kesar)
Chopped pistachios and saffron strands (for garnish)

These homemade pedas provide a wholesome treat featuring healthy fats from A2 Gir Cow Ghee and calcium from full-fat milk, balanced with mineral-rich jaggery instead of refined sugar. Estimated values per serving (assuming 12 servings): 145 Calories, 4g Protein, 8g Fat, 15g Carbohydrates.

In a kadhai, take 1.5 litres of full-fat milk and heat it on a medium flame.

Once it is hot (not boiling), add 1.5 tablespoons of lime juice and stir gently so the milk curdles.

Turn the heat to high at this stage.

In another pan, take 1/2 cup of jaggery powder and 2 tablespoons of water, letting it melt completely.

Once the jaggery is melted, add it into the curdled milk mixture.

Let the milk mixture dry until all the water evaporates and you achieve a halwa-like texture.

Add 2 tablespoons of A2 Gir Cow Ghee, 1 teaspoon of cardamom powder, and some diluted saffron, mixing well.

Let the mixture cool down a bit. When it is still warm, mash it with your palm for a few minutes.
