Infusing the flavors of kiwifruit and pineapple into the traditional mint pani has taken this classic Indian street food to a whole new level. Have used Kiwi fruit from Chile in this recipe. Did you know kiwifruit is the highest in vitamin C compared to oranges or lemons? And the best part is, you don’t even need sweet chutney because the natural sweetness of the fruits already takes care of that. It’s a burst of flavors in every bite!

In a mixer jar, combine 2 chopped kiwifruits, 1 chopped pineapple, 1 medium-size piece of ginger, and 2-3 green chilies. |

Add a bunch of coriander and a small bunch of mint leaves. Squeeze in the juice of 1 lemon. Churn the mixture until well blended. |

Strain the blended mixture to extract the Pani. Discard the pulp. |

To the extracted Pani, add 1.5 tsp roasted jeera powder, 1 tsp chili flakes, 1 tsp black salt, and regular salt to taste. Mix everything thoroughly. |

Stir in some finely chopped kiwifruit, finely chopped pineapple, and mint leaves. |

Add crispy masala boondi to the Pani just before serving. |

In a bowl, combine boiled black chana, boiled moong beans, and boiled potato (mashed or cubed). Add jeera powder, coriander powder, red chili powder, and salt to taste. Mix everything thoroughly. |

Fill each puri with the prepared stuffing. Pour the Kiwi Pineapple Pani over the stuffed puris. |
