Lasooni Methi is a flavorful Indian dish made with fenugreek leaves (methi) and garlic (lasoon). The garlic is sautéed to a golden brown, adding a rich, aromatic flavor to the dish. Fenugreek leaves are cooked until wilted, often paired with spices like cumin, turmeric, and garam masala. It can be enjoyed as a side dish with roti, paratha, or rice. Blend the roasted peanuts and sesame seeds into a fine powder. Mix this powder with gram flour (besan) and water to form a thick paste. Set aside. |

In a pan, heat 2 tsp oil. Sauté the sliced garlic until golden brown, then add the chopped fenugreek (methi) and cook until wilted. |

In the same pan, add the remaining 2 tsp of oil. Stir in cumin seeds and a pinch of asafoetida. Once fragrant, add the finely chopped onion, green chillies, ginger, garlic, tomato, and the following spices: turmeric powder, red chilli powder, coriander powder, and salt. Cook until the onions are softened and the tomatoes break down. |

Add the prepared peanut paste to the pan with the cooked methi. Mix well and let it simmer for a few minutes to blend the flavors. |
