Ingredients

2 small cucumbers, shredded and squeezed to remove water
1/2 Cup hung curd
Few chopped mint leaves
Garlic and green chilies, chopped
2 Tsp Tahini (or substitute with dry roasted and ground white sesame seeds)
1/2 Lemon Juice
Salt to taste
Oil for sautéing
Roasted cumin seeds powder
Chili powder
Coriander powder
1 small onion, chopped
1 boiled sweet potato, diced
Small piece of carrot, diced
Boiled chickpeas
Salt to taste

Mediterranean salad is a vibrant dish bursting with flavors from the Mediterranean region. It typically includes fresh vegetables like chickpeas, hung curd, tomatoes, cucumbers, bell peppers, and red onions, along with olives and feta cheese. The salad is dressed with a simple vinaigrette made with olive oil, lemon juice, garlic, and herbs like oregano or basil. In a bowl, mix shredded cucumber (with water squeezed out) with hung curd. Add chopped mint leaves, garlic, green chilies, Tahini, lemon juice, and salt. Mix well.

In a pan, heat some oil and add roasted cumin seeds powder, chili powder, and coriander powder. Sauté the spices on a slow flame.

Add chopped onion, boiled sweet potato, diced carrot, and boiled chickpeas to the pan. Season with salt and cook for 5 minutes.

To assemble the Mediterranean Salad, spread some hung curd mixture in a bowl. Place the prepared salad on top.
