Gujarati dal bhat osaman is a traditional Gujarati meal consisting of dal (lentil soup), bhat (steamed rice), and osaman (thin, spicy soup). The dal is often made with pigeon peas (toor dal) flavored with spices like mustard seeds, cumin, and curry leaves. Osaman is a light, tangy soup made with water, ginger, green chilies, and spices like cumin and mustard seeds. This wholesome meal is typically served with a dollop of ghee and accompanied by side dishes like sabzi (vegetables) and pickles, offering a balanced and flavorful dining experience.

Take Tovar dal and cook it with 4 times water in a pressure cooker until 4 whistles.

Strain the water from the cooked dal and keep it aside for making Osaman later.

Prepare the chutti dal by adding turmeric powder, hing, ghee, and salt to the cooked dal.

For Osaman, in a pan, heat ghee and add cloves, cinnamon stick, mustard seeds, cumin seeds, asafoetida, and curry leaves.

Once you hear crackling sounds, add chopped tomatoes and green chillies.

Add roasted cumin seeds powder, red chilli powder, turmeric powder, and salt.

Once the masalas begin to cook, add the strained dal water and a small piece of jaggery.

Let the Osaman boil, then turn off the heat and add fresh coconut, lime juice, and coriander leaves. Serve the chutti dal, Osaman, and cooked rice together.
