Methi Gond Pista Rolls are a delightful Indian sweet known for their unique combination of flavors and textures. They feature fenugreek (methi) seeds, edible gum (gond), and pistachios rolled into bite-sized treats. The fenugreek seeds add a slightly bitter and earthy taste, balanced by the sweetness of sugar or jaggery used in the recipe. Grind one tablespoon methi into a fine powder , further transfer into a one tablespoon bowl of ghee and soak for half an hour.

Fry gond in a small of ghee and further combine into a coarse mixture whilst adding saunf powder.

Cook soft dates , ghee and the methi mixture together then add this to the gond, add pistachios and a hint of elachi powder (optional).

Combine together , shape into a cylinder and roll into fine chopped pistachios.

Wrap the roll into foil and set aside for 1 hour.

Cut into pieces and enjoy.
