Mash soft dates and warm water in a bowl whilst add jaggery powder , oil , vanilla essence and cinnamon powder and combine well. |

Into the same bowl add carrots , wheat flour , baking powder and baking soda. |

To add the crunch , add toasted chopped walnuts. |

Add the mixture to a lined and greased baking tin and garnish with more walnuts. |

Baked the cake at a temperature of 200deg for 30-40mins. |
