Ingredients

One big bunch of Methi, finely chopped
300 gms Green Peas
Coarsely crushed Peanuts & White Sesame Seeds 3-4 Garlic Cloves
2 Green Chillies
1 small Ginger Knob
2 Tsp Oil
1 Tsp Cumin Seeds (Jeera)
Pinch of Asafoetida Powder (Hing)
1 Medium sized finely chopped Onion
Salt as per taste
1/2 Tsp Turmeric Powder (Haldi)
1 Tsp Coriander Powder (Dhaniya Powder)
300 gms Green Peas
1 Spoon Water

Methi Matar Ki Sabzi is a celebration of seasonal produce and traditional Indian flavors. The bitterness of fenugreek leaves is balanced by the sweetness of green peas, creating a harmonious blend of tastes. 

It is a nutrient-dense dish, combining the vitamins and minerals from fenugreek and green peas. This provides essential nutrients that contribute to overall well-being.

Steps

In a pan, separately dry roast 1 tablespoon Gram Flour, 1 tablespoon Peanuts, and 1 tablespoon White Sesame Seeds. Once roasted, coarsely crush the Peanuts and Sesame Seeds.

In a chopper, chop 3-4 Garlic Cloves, 2 Green Chillies, and 1 small Ginger Knob.

Heat 2 teaspoons of Oil in a pan.

Add 1 teaspoon Cumin Seeds (Jeera) and a pinch of Asafoetida Powder (Hing).

Add chopped Ginger, Garlic, and Green Chillies. Sauté until aromatic.

Add 1 medium-sized finely chopped Onion and cook until it becomes translucent. Season with Salt as per taste.

Add 1/2 teaspoon Turmeric Powder (Haldi) and 1 teaspoon Coriander Powder (Dhaniya Powder). Mix well.

Add 300 grams of Green Peas and a spoonful of Water. Cover the lid and let it partially cook.

Add finely chopped Methi (Fenugreek Leaves) and mix it well.

Cover the lid and cook for 5-7 minutes on medium heat.

Add 1 tablespoon of the previously roasted Besan.

Drizzle a little Water, cover, and cook for a while until the flavors meld.

Further, add the crushed Peanuts and White Sesame Seeds. Mix well.

Turn off the heat and transfer the Methi Matar ki Sabji to a serving plate.
