Methi Matar Ki Sabzi is a celebration of seasonal produce and traditional Indian flavors. The bitterness of fenugreek leaves is balanced by the sweetness of green peas, creating a harmonious blend of tastes.

In a pan, separately dry roast 1 tablespoon Gram Flour, 1 tablespoon Peanuts, and 1 tablespoon White Sesame Seeds. Once roasted, coarsely crush the Peanuts and Sesame Seeds. |

In a chopper, chop 3-4 Garlic Cloves, 2 Green Chillies, and 1 small Ginger Knob. |

Heat 2 teaspoons of Oil in a pan. |

Add 1 teaspoon Cumin Seeds (Jeera) and a pinch of Asafoetida Powder (Hing). |

Add chopped Ginger, Garlic, and Green Chillies. Sauté until aromatic. |

Add 1 medium-sized finely chopped Onion and cook until it becomes translucent. Season with Salt as per taste. |

Add 1/2 teaspoon Turmeric Powder (Haldi) and 1 teaspoon Coriander Powder (Dhaniya Powder). Mix well. |

Add 300 grams of Green Peas and a spoonful of Water. Cover the lid and let it partially cook. |

Add finely chopped Methi (Fenugreek Leaves) and mix it well. |

Cover the lid and cook for 5-7 minutes on medium heat. |

Add 1 tablespoon of the previously roasted Besan. |

Drizzle a little Water, cover, and cook for a while until the flavors meld. |

Further, add the crushed Peanuts and White Sesame Seeds. Mix well. |

Turn off the heat and transfer the Methi Matar ki Sabji to a serving plate. |
