Our childhood had few romances, and one of them undoubtedly has to be Nankhatai. While loosely compared to shortbread cookies, the ingredients and texture of these traditional Indian cookies are wonderfully different. Ekdum khasta Nankhatai banti hain, bahut hi lajawaab aur swadisth!
In this video, I will show you how to make Nankhatai at home using both oven and no-oven baking methods. This easy Nankhatai recipe is perfect for your Diwali sweets menu. Making bakery-style Nankhatai on a stovetop is incredibly simple, and the results are just as perfectly crisp as the oven-baked ones. Try out these eggless homemade cookies for the festive season!

In a mixing bowl take 5-6 tbs ghee ( whisk well) |

Add 1 cup powder sugar (churned and seived sugar). Again beat well & bring it to creamy consistency. |

Add a pinch of salt. |

Add 3/4 cup plain flour (maida - alternatively wheat flour can be used). Add 1/2 cup gram flour (besan). Add 3 tbs semolina (suji/rava) |

Add 3-4 cardamom powder (elaichi), Add 1/4 tsp baking soda, Add 1/4 tsp baking powder. Gently mix it with the help of spatula |

Begin to knead & make a semi soft dough |

Keep it in refrigerator for 10 min to set |

With the help of measuring spoon make small round shape Balls/Nankhatai |

Take 2 trays along with butter paper on it |

Place all Nankhatais in both the trays |

Top with some chopped almonds & pistachios |

Pre heat oven for 15 min at 180⁰ and bake for 17-18 min in middle rack by keeping both coils on. |

To bake it on stove, pre heat steamer along with a stand for 10 min. |

Keep tray in it & cover lid with a cloth . |

Bake it on slow flame for 25 min |
