For the Dough & Churma: 1 cup Ragi (Finger Millet) Flour

Hot Waterless than 1/2 cup, as needed

In one cup Ragi Flour, add a pinch of salt and knead the dough with hot water (add hot water as required. It will take approximately less than 1/2 cup water, do not add it one time). |

Make soft dough. |

Heat the flat pan on a medium flame. Grease it with Ghee. |

With wet hands, take a portion from prepared dough, and spread it thin on the pan. Keep flames medium only. |

Cook this dry on both sides, then apply 2 tsp Ghee on each side, and cook till you get golden color. In between keep pressing it with spatula so that you get crispy texture. |

Once it’s done, take it out on wire rack and let it cool down. |

Tear it with your hands and then take it in a mixture jar and coarsely grind it on a pulse mode.Texture should coarse. |

Now in a pan, add 2 tsp Ghee and add 12-15 almonds. Roast it on slow flame. |

Once it’s almost done, then add same amount of cashews cut into pieces, 1/4 cup peanuts and 3 tbs white sesame seeds. |

Roast everything together till you get nutty fragrance. |

Take it out in a bowl and let it oool down. Once it’s cool down, coarsely grind it with some elaichi powder. |

Add this nut mixture into Ragi Churma. |

Now in a sauce pan, take 1/4 cup Jaggery (you can increase or decrease the quantity according to your taste). |

Add 2 tbs of water in it and let it cook on a medium flame till mixture becomes sticky. (You don’t need any kind of chaasni in this). |

Pour the hot jaggery mixture into Churma mixture. Mix everything well when the mixture is hot. |

Pro Tip : Shape or bind the modak when the mixture is warm only - do not let it cool down. |
