Ingredients

3 tbsp Rice (soaked for 2 hours)
1 L Milk (out of which 1/2 cup is used for cooking Rice, 2 spoon for Caramel & remaining Milk is used in Kheer)
1/3 cup Sugar
Spoonful of Water
1 tsp Butter (optional)
7-8 roughly broken Chilean Walnuts + more 3-4 to garnish

Walnut Caramel Kheer is a delectable Indian dessert that combines the creamy richness of kheer with the nutty flavor of walnuts and the sweetness of caramel. Walnut is rich in omega-3 fatty acids, which are beneficial for heart health. They also contain antioxidants and may help reduce inflammation.

Steps

In a pressure cooker, combine the soaked rice and approximately 1/2 cup of milk from 1 liter. Cook up to two whistles on medium heat.

Heat a deep-based pan. Add sugar and a spoonful of water. Cook on low heat without stirring.

When it turns golden-brown, stir once. Turn off the heat and add butter (if using). Add 2 spoons of warm milk and stir continuously. Set aside.

In another pan, heat the remaining milk and let it come to a boil. Add the cooked rice to the warm milk and let it cook for approximately 5 minutes until the kheer thickens. Once the kheer thickens, add the roughly broken Chilean Walnuts.

Finally, add the prepared caramel and mix it well into the kheer. Transfer the Caramel Walnut Kheer to a serving bowl. Garnish with additional Chilean Walnuts for an appealing presentation.
