1 Fresh Coconutmedium size

1/2 cup Full-fat milk

2 cups Full cream milk

4-5 Elaichi (cardamom) powder

1/4 cup Milk powderOptional

1/4 cup cashew nuts

20 Dates(remove seeds, soak in warm milk for 30 min)

1-2 tbsp Ghee

Who says you can’t enjoy sweets without sugar?
This festive season, I’m excited to share my guilt-free SUGAR FREE Fresh Coconut and Dates Laddoo recipe, specially made for Ganpati Bappa!

Take 1 fresh coconut (medium size)- in terms of measurements, it should be 2 cups. |

Remove the brown skin, cut it in small pieces and blend it in a mixer jar with 1/2 cup full fat milk. (Blend it Smooth). |

Now in a Kadhai, boil 2 cups full cream milk, into that add coconut mixture and 4-5 elaichi powder. If you want, you can add 1/4 cup milk powder also. (Optional). Stir continuously; as this mixture tends to get stuck at the bottom - heat should be medium and keep stirring. Boil the mixture till it reduce to half. |

Now in a blender jar, take 1/4 cup cashew nuts and around 20 dates (remove the seeds and soak dates in warm milk for half an hour) and make a smooth paste. |

Add this paste into the coconut mixture when the mixture is further reduced due to continuous boiling.Along with that add 1-2 tbs ghee. Keep stirring this mixture it becomes completely dry and thick. ( Once it’s almost done, it will splash around the Kadhai, so be careful while stirring) |

Once the mixture gets dry and starts leaving the surface of Kadhai, turn off the heat, take this mixture out and spread it on a plate. Let it cool down completely. You can leave the mixture in the fridge for few hours if required. |

Then make laddoos out of this mixture and roll them into the mixture of Pistachio and Dry Coconut. |
