3 medium sized Tomato Puree

A big bunch of Spinach (Add Palak in hot water, remove in 5 seconds & transfer in a bowl of Ice Water to cool down)

1/2 Lemon Juice

1/4 cup Cashew Paste (alternatively 1/4 cup Fresh Cream or 1 tbs Malai can be used)

Palak Paneer is a popular North Indian dish made with paneer (Indian cottage cheese) and spinach (palak). Paneer cubes are added to the creamy spinach gravy, making a nutritious and flavorful dish. Blanch the palak (spinach) and set it aside to cool down. |

Heat a pan and add 2 tsp ghee. Add 2 bay leaves (tej patta), 2 small cinnamon sticks (dalchini), and 2 dry red chilies. Add 1 tsp cumin seeds (jeera), 1 small piece of finely chopped ginger knob, and 2 finely chopped garlic cloves. |

Add 1 medium-sized finely chopped onion and salt to taste. Add 1 tsp garam masala and a pinch of turmeric powder (haldi). Fry well, then add puree from 3 medium-sized tomatoes. Cover the lid and let it cook. |

In a mixer jar, take the blanched palak. Add a big bunch of coriander leaves, 2 green chilies, and 1/2 lemon juice. Churn to make the puree. |

Add the palak puree to the pan. Add 1/4 cup cashew paste and mix well. |

Add 200 gm paneer, cut into cubes, and cook for 5 minutes before turning off the heat. |

For tempering (tadka), heat another pan and add approximately 1.5 tbsp ghee. |

Add 2-3 finely chopped garlic cloves and 1/2 tsp Kashmiri red chili powder, then fry. |

Pour the tadka over the palak paneer in a serving bowl. Serve this scrumptious palak paneer with puri, paratha, roti, chawal, or bread. |
