Papad Poha with pomegranate, tomatoes, and raw mango is a delicious and refreshing snack or light meal that combines the crunch of papad with the sweetness of pomegranate, the tanginess of tomatoes, and the zing of raw mango.

In a mixing bowl, combine the chopped tomatoes, finely chopped raw mango, pomegranate seeds, finely chopped coriander leaves, salt, and sugar (if using). Squeeze the juice of one lemon over these ingredients and mix well. |

Add 1.5 cups of soaked poha to the mixture and give it a good mix. |

Heat up a pan for tempering. Add oil to the pan. |

Turn off the heat, and add this tempering (tadka) to the poha mixture. Mix it well to combine. |
