1.5 Chopped Tomatoes
Finely chopped Raw Mango Alternatively Cucumber can be used
Pomegranate Seeds
Finely chopped Coriander Leaves
Salt
Sugar optional
1 Lemon Juice
Roasted Papad
Boondi
Oil For Tampering
Mustard Seeds
1.5 Tbs Raw Peanuts
Chopped Green Chillies
Few Curry Leaves
Finely Chopped Onion
Crushed Papad, Boondi, Coriander For garnishing

Papad Poha with pomegranate, tomatoes, and raw mango is a delicious and refreshing snack or light meal that combines the crunch of papad with the sweetness of pomegranate, the tanginess of tomatoes, and the zing of raw mango.

In a mixing bowl, combine the chopped tomatoes, finely chopped raw mango, pomegranate seeds, finely chopped coriander leaves, salt, and sugar (if using). Squeeze the juice of one lemon over these ingredients and mix well.

Add 1.5 cups of soaked poha to the mixture and give it a good mix.

Heat up a pan for tempering. Add oil to the pan.

Add mustard seeds and let them splutter.

Add 1.5 tablespoons of raw peanuts and fry them until they turn light golden in color.

Add chopped green chilies, curry leaves, and finely chopped onions to the pan. Sauté for about 2 minutes or until the onions become translucent.

Turn off the heat, and add this tempering (tadka) to the poha mixture. Mix it well to combine.

Further, add some crushed roasted papad and boondi to the mixture. These will add a crispy and crunchy texture to the dish. Mix everything together.
