IN A MIXING BOWL, TAKE 2 CUPS OF CASHEWS, ADD ½ TBSP WATER, AND MIX WELL. |

HEAT A PAN, ADD 500 GM SALT, AND ROAST THE CASHEWS IN IT FOR 15-20 MINUTES ON MEDIUM HEAT UNTIL THEY TURN LIGHT GOLDEN-BROWN. |

TURN OFF THE HEAT, SIEVE THE EXCESS SALT, AND LET THEM COOL DOWN. |

IN ANOTHER PAN, HEAT 1 SPOON OF BUTTER OR GHEE, ADD 1 TSP RED CHILLI POWDER, ½ TSP DRY MANGO POWDER, ½ TSP CHAAT MASALA, AND 1 TSP DRY PUDINA POWDER, THEN FRY WELL ON LOW HEAT. |
