Sprouted Jowar Upma is a nutritious and wholesome dish made from sprouted sorghum grains, also known as jowar. It is a popular South Indian breakfast option, rich in fiber, vitamins, and minerals. The sprouting process enhances its nutritional profile, making it easier to digest and boosting its nutrient content.

Cook 1 cup of sprouted jowar in a pressure cooker with 1/2 cup water for 3 whistles. |

In a pan, heat 1 tsp ghee and add 2-3 bay leaves, 2 cinnamon sticks, 1/2 tsp cumin seeds, 1 tbsp white sesame seeds, 2 tbsp peanuts, and 5-6 cashews. |

Add 2-3 finely chopped garlic cloves, a small knob of ginger (finely chopped), and chopped onion. Season with salt, 1/2 tsp turmeric powder, 1/2 tsp coriander powder, red chilli powder to taste, and a pinch of garam masala. |

Mix well and add finely chopped veggies (tomato, carrot, cauliflower) and green peas. |

Saute and add the boiled jowar. Add 3-4 tbsp water, cover, and cook for 10 minutes on medium heat. |

Squeeze half a lemon and add chopped coriander. |
