Heat 1 tsp oil in a pan, add 1/2 tsp mustard seeds, 1/2 tsp cumin seeds, finely chopped garlic, onion, ginger, and green chili. Season with salt, turmeric powder, coriander powder, red chili powder, and a pinch of asafoetida. |

Add boiled mashed potatoes, squeeze half lemon, sprinkle chopped coriander, mix, and transfer to a bowl. |

In a mixing bowl, take 1 cup gram flour, add 1/2 tsp turmeric powder, a pinch of asafoetida, and 1 tsp carom seeds. Gradually add water to make a thick batter. |

Stuff 5-6 big green chilies with the potato mixture and coat with besan batter. |

Place parchment paper in the air fryer, grease with oil, place stuffed chilies, brush with oil, air fry at 200⁰C for about 15 min, flipping halfway through. Serve hot with green chutney. Enjoy your scrumptious stuffed mirchi vada! |
