Ingredients

1 Tsp Oil
5-6 big Green Chillies
1/2 Tsp Mustard Seeds (Rai)
1/2 Tsp Cumin Seeds (Jeera)
Finely chopped Garlic, Onion, Ginger & Green Chilli
Salt as per taste
3 Tsp Turmeric Powder (Haldi)
1/2 Tsp Coriander Powder
Red Chilli Powder (as per taste)
Pinch of Asafoetida Powder (Hing)
Boiled mashed Potatoes
Half Lemon
Chopped Coriander
1 Cup Gram Flour (Besan)
Water (as required)

Stuffed mirchi vada is a popular Indian snack consisting of large green chilies filled with a spicy potato mixture, coated in gram flour batter, and deep-fried until golden and crispy. The gram flour batter provides a crunchy outer layer that contrasts with the spicy filling. Stuffed mirchi vada is often served with tangy tamarind chutney or green chutney, making it a delicious and satisfying street food snack enjoyed across India.

Heat 1 tsp oil in a pan, add 1/2 tsp mustard seeds, 1/2 tsp cumin seeds, finely chopped garlic, onion, ginger, and green chili. Season with salt, turmeric powder, coriander powder, red chili powder, and a pinch of asafoetida.

Add boiled mashed potatoes, squeeze half lemon, sprinkle chopped coriander, mix, and transfer to a bowl.

In a mixing bowl, take 1 cup gram flour, add 1/2 tsp turmeric powder, a pinch of asafoetida, and 1 tsp carom seeds. Gradually add water to make a thick batter.

Stuff 5-6 big green chilies with the potato mixture and coat with besan batter.

Place parchment paper in the air fryer, grease with oil, place stuffed chilies, brush with oil, air fry at 200⁰C for about 15 min, flipping halfway through. Serve hot with green chutney. Enjoy your scrumptious stuffed mirchi vada!
