Ingredients

1 Raw Sweetcorn (medium size), shredded
1 Onion (medium size), finely chopped
3-4 cloves Garlic, finely chopped
A few Green Chilies, finely chopped (adjust to taste)
Fresh Coriander, finely chopped
1 tsp Ajwain (carom seeds)
1 tsp Jeera (cumin seeds)
1/2 tsp Haldi (turmeric) powder
1 tsp Dhaniya (coriander) powder
1 tsp Mirchi (red chili) powder
1/2 tsp Garam Masala
Salt, to taste
3 tbsp White Sesame Seeds
3 tbsp Rice Flour
1 cup Ragi (finger millet) Flour
Water, as required
Oil, for greasing the pan and cooking

Shred 1 raw sweetcorn, take it in a bowl.

Into that, add finely chopped - 1 medium size onion, a few green chillies and 3-4 cloves of garlic.

Then add fresh coriander, 1 tsp ajwain, 1 tsp jeera, 1/2 tsp haldi powder, 1 tsp dhaniya powder, 1 tsp mirchi powder, 1/2 tsp garam masala, salt per taste, 3 tbs white sesame seeds.

Then add 3 tbs rice flour and 1 cup plus Ragi flour.

Add water as required, and make a soft dough.

Now grease the pan with oil. And with help of wet hands, take small portion of Thalipith dough and spread it on the Tawa; as thin as possible.

With help of spoon, mix few holes so that Thalipith becomes crispy.

Add some oil around Thalipith and inside the holes of Thalipith as well.

Cook both sides on medium flame, till it comes out nice and crispy.

Enjoy with white makhan or dahi or green chutney. It pairs best with a cup of chai.
